I thought I would check the Version 3 compatibility tab in the Customize Property Box dialog to see what the Detail tab looked like - and have now found that I can't revert to the highly customised tabs that I had set up before....are they gone forever?

I am on holiday and don't have access to FH, but you may be correct.
Have you tried reversing the Version 3 option?
May be too late now, but in future ensure to take regular backups of all your customisations by using the Backup And Restore Family Historian Settings Plugin.

There is no option to reverse - and although one can turn off the Details tab, that is all I can find. There was also no warning that changes may be irreversible and I can find nothing in the documentation. I have restored from backup but the customizations did not appear to be there. I shall start again... but it might be worth noting for future documentation.

No, customisations are not saved in Project backups, so you need to use the Plugin that I mentioned earlier.
Report the problem to Calico Pie because as you say there should be a warning that custom tabs will be lost.
If by chance you are running Windows 7 then you may be able to retrieve your custom tabs.
Find C:\ProgramData\Calico Pie\Family Historian\Property Box\Indi.fpbt (or something like that)
Right-click that file and choose Restore previous version (but that may not be available).
