Hi all,
I'm using version 4.5, and I have a slightly chaotic project with entries that aren't necessarily confirmed; I naively thought it would be a way to not lose any potential discoveries.
I've decided to upgrade to 6, and at the same time become a reformed Family-Historianer. So I'm going to begin by creating a new project with only confirmed data (and in a strange way I'm rather looking forward to starting again).
I've downloaded the trail version 6, but of course will upgrade fully now. Can anyone recommend the booklet "Where to Record It: In Family Historian v6" by William Clegg? I wondering it might help me on my way to better recording?

No, leave that one on the shelf, it contains lots of misleading advice, and nobody knows who William Clegg is. He is not a member of this FHUG, and never appears in the FHU Mailings, unless he is using a psuedonym, but why would he?
If you are starting from scratch then I recommend using ancestralsources:index|> Ancestral Sources.

When starting a brand new FH project, would a good approach be to simply add known people in their most basic form (no dates, other information, etc.) in to FH, then use Ancestral Sources to provide the detail?

You can do it that way, or use AS to add the people as you add their Source details, or any combination you prefer.
Sometimes, you will find Source documents that AS does not handle, such as Electoral Roll, Divorce, Will and Probate. Then you will have to enter everything directly using FH.

There are clearly different approaches to starting afresh. When I started with FH5 I took my existing file, imported from Legacy, and stripped it of all data except the most basic names and dates (sourced or not) to give me a starting point. (At the same time it gave me a bit of practice at writing a plugin, in my opinion an essential basic skill when using FH v. 5 or later)
I think it is much harder to find source records for individuals and marriages without some idea of names, dates of birth/death and marriage dates. Once you have the source records then you can, if necessary, correct the names and dates.
