I would like to start a project but have it placed in a different drive location 'say Drive D' as my C: Drive is just for programs.
I am unable at the moment to find this option....thats if it exists.

It certainly exists, and is in the Project Window.
Use File > Project Window and click on the blue path next to Location: and select Choose Location to change your default Project Folder Location.
For example, I have F:\Family History\Family Historian Projects.
This will place all your Projects within that folder.
Full details are given by clicking the Help button in the Project Window and then Features of the Project Window where you can read about the Location field.
If you want the nominated Project to open by default whenever you start FH, then use More Tasks > Default Project also explained on that Help page.
