In the Diagram Options/Text/Edit Text Scheme... you appear to be able to change only the initial font, that is the font used to display the name. Is it possible to alter the font for the remaining items displayed?

Yes it is possible. Just click on the font line, press Clone Line at the bottom, move it to where you want it to take effect from, then click Edit and change the font options to the ones you want. I've attached a screenshot which will hopefully help.

There's also a Font item in the left box, highlight it and click the ">" button and you can change the options directly, and it will appear on the right. Just use the up/down arrows to place it.
