Electronic as well as paper media

I have a series of corrrespondence between my father and various researchers dating from 1950's and 1990's, which I have started to examine. I've scanned in pages that have new information for me to add to FH but I cannot decide whether to scan in the whole series of letters, even those that are merely(!) requesting payment for various researches and dad's replies and instructions.
What do other people do with paper records that might be interesting, or not, as family historical records but aren't particularly relevant to actual family history? Do you have a policy of scanning everything, because it might get lost or go up in smoke, and it saves making a conscious selection process if everything is scanned?
