I have just discovered that the employment status in the 1891 and 1901 UK censuses appears in the note field in full e.g. from 1901 'Employer, Worker or Own account: Employer'  It might also happen for 1911 but I don't have too many of those.  It also seems to happen for US censuses but for the Industry, business or establishment field as well.

I have no idea how or when this happened but I could do some investigation if you give me some idea what to look for - it's a bit haphazard.  I don't even know if it happened with records created with GC or AS

These Notes are managed by the Census Templates.
See the AS Census > Census Templates menu option.
Choose the Country and Year at the top and select a Census Column on the left.
For Column Type: Generic there is an option called Recording: that determines how data is recorded.
The default is Append to occupation/census event local note.
Change this to Don't record to stop the Note entries.
Then click the Save button below.
Repeat for each Census country and year affected.

Thank you for explaining why this is happening.

I can see some merit in displaying the value of the field as a note but not the heading of the field as some US censuses become, in my view, quite ugly e.g.:
General nature of industry, business or establishment: Own shop
Whether employer, employee, or working on own account: Employer

I think I will remove the note and rely on the image of the census for this information.

It was something that was requested a number of times when I was designing Ancestral Sources. The feeling being that these were important extra snippets of information regarding the occupation. If you don't want the notes to appear in reports then you can untick the appropriate FH option so that local notes are not shown. Alternatively edit the templates as tatewise suggests.

I forgot to mention that this feature was not in Gedcom Census, it was added in Ancestral Sources.

Also there is another refinement.
In AS use Tools > Options > Census settings, and under Generic Columns lower right, there is an option to Include note titles.
If you remove the tick, then the Column Title is excluded from the Note and only the entered value is included.
Referring back to your original posting, instead of 'Employer, Worker, or Own account: Employer' the Note would only contain 'Employer'.

To get this to work you must restore the Recording: option that I described above back to the installation setting.
Use Census > Census Templates > Reset button at the bottom and select which countries and years to reset.

In the Help page for Census Template Editor, under Column Type: Generic: there should be a cross-reference to the Ancestral Sources Options page Census settings subsection for Generic Columns.

Thank you tatewise, that is what I wanted to do.

I did look in the help but I did not look in the census template editor help - because I searched on 'notes' and it does not come up.  The Ancestral Sources options did come up but I did not scroll down after I reached Occupation Facts.  So I agree with you that more cross-referencing in the help pages might have helped me.
