Hi
Is it possible to view & edit census sources that are already in Family Historian or will AS only write new sources.

Existing Census Entries
It only creates entries. Ancestral Sources (and Gedcom Census before it) takes a census entry and then creates multiple facts all over your file, various citations (which may or may not have a lot of information in them), sources, multimedia records and so on. To pull together all those different strands back into one place isn't easy. For example many of the columns in the census aren't recorded anywhere other than within the source text field so how could those be retrieved for editing? Another problem with editing existing entries is the multiple different ways that people record their information, e.g. recording method 1 or method 2, transcription in source text, in citation text or nowhere. How would it cope if the transcription was in 10 citations but the user had since edited one of those transcriptions so they no longer match.
There are ways that a crude editing system could operate based around dealing with the facts and citations as raw data but basically this would then be doing what Family Historian already does and so the effort of developing systems to do this would not really bring many benefits to the user.

Existing Census Entries
All I did when I moved to GC was to delete all my census entries and re-enter them, a year at a time.
