At the beginning of my family history experience I created a new Event/Attribute called 1851 Census Address . . . I would now like to get delete the word Address and just use 1851 Census! Help!

The only way I can think would be to use a text editor to do a search and replace, if you have lots or simply replace the event manually by copying the details over.

If it were mine I would bite the bullet and redo the all census into standard events.
That's what I did a while ago to get all the Census images attached and everything sourced correctly after I abandoned FTW.

I agree with Jane.
Using Nick Walker's add-on, Gedcom Census, makes it easy to add census events. And if you happen to miss something, Family Historian's auto-source citation makes it easy to add the other data and link in the source citation.
