'Touching up' old documents

Hi,
I wondered if any body had tips about 'touching up' old documents. Most genealogy books show copies from old parish registers which look as clear as the day they were written. I have tried improving the quality of the grey background of many of mine, but haven't found a quick or satisfactory method.
I would like to send relatives cd's of my research, but many parish records when for example printed fron fiche and then scanned are of such poor quality
