What suggestion do you have for the useage of the Occupation in the Properties input form. Should it be the last known occupation? or the first known occupation? or is there some other idea?

You can choose.
On the Events Tab you can add as many occupations as you want.

I think the first occupation listed in the records window is the one which appears there.

Personally I keep my occupations by date, so the one on the properties dialog is the first occupation I know of.
