Can you please give guidance on how best to deal with a change of name by deed poll. The individual is born with his family name and this is shown on birth and marriage certificates - but then changes his name by deed poll.

Not a problem, you can add a new name via the All Tab, just right click on the person to add another name. You can then add source information.
I would also be tempted to add a custom event for the Deed Poll action, if you have details of the date etc.

Change of name by deed poll
Browsing the forum I came across this and thought, great, now I know what to do with my ancestor with 2 names, but how does it help?... He has 2 names on his All tab, but the other one doesn't appear on the records list, nor on the narrative report, nor on the diagram... have I missed the point?

You can easily add the second name to your diagrams. The reports excluding the new narrative report can be customised to show additional names, very easily.
The records window only shows records, so which ever name is listed first will be shown, using the find text option will find the second name, if you want to could configure a column to show the second name if you wanted.
The expresion for the second name is
%INDI.NAME[2]%
