Which is the best way to enter information about a mother who has a Child out of wedlock but then she marries but he is not the father

This is the answer posted to you question on the List

I'm no expert David but I would suggest you create a record for mother add a
child but give father (1st partner) no name and then add another
partner/husband for mother - the child would then show as having a different
father to husband.

This is the way I would do it to add new family as spouse and add the child with out adding a father.
