When searching for a name in the Records window, I would like the cursor to be ready in the surname box by default, without my having to put it there.
When I return for another search in the Records window, I would like the cursor to be in an empty surname box by default.
When the person is found, generally the third name down, I would like it to be more colour pronounced.

There are some useful Keyboard Shortcuts that help with your wishes.
See Help > Family Historian Help > Keyboard and Mouse Shortcuts.
For example:
Ctrl+D moves focus to Search field at top of Records Window.
Ctrl+Shift+D as above but sorts list into alphabetical order.
Since any existing Search contents is selected in blue you can simply over-type it.
F6 will toggle between, and select in blue, the chosen Record and the Search box.
This almost satisfies all your wishes with one key press.
Try it and see.
