Raising this issue to see if anyone else is having problems with it. Basically the text in a source's actual text field switch to double line spacing after editing of recently pasted text.
This problem appears (in FH v3.1.2) when the following process of adding a new source is followed.
1. Create a new source record by clicking on the scroll icon in the soure pane of the property window.
2. Click the New button and fill in various fields in the new source record window (e.g. title, type, publication).
3. Text from an internet site (example is http://www.findagrave.com, but many others including ancestry cause this problem) is pasted into the text from source edit field.
4. Click the create button to close the new source record window and return to the property window.
5. Click the >> button in the source pane to go to the source record.
6. Double click the text from source edit field to open the edit window (though the problem also appears if the text is edited in place, ie within the property window).
7. Edit the text, and click OK.
8. The text in the text from source edit field is now shown in double spacing. When the text is edited in-situ, to show the problem you need to go back to the previous record (the record the source is attached to) and then go to the source record again.

You are quite right. It is a bug and it will be fixed in the release. You can work around the problem for now by delaying pasting the Text From Source information until you have opened a separate edit window in Step 6. If you do that, you won't get the double line spacing.
