Is it possible to make a dark mode plugin? If so where would I start?

I think you need to explain what you mean by a 'dark mode plugin', otherwise we are just guessing.

Dark mode is a user interface (UI) design theme that displays light text on a black background instead of the traditional black text on white background.

CLRhodes, there's nothing in the FH API available to plugins that allows you to manipulate the UI. You can go some way towards dark mode by modifying screen colours (Tools > Preferences and then Focus Windows, Records Window, Property Box etc.) but it will be a tedious undertaking and it isn't possible in all places e.g. the Records window to set a dark background and light text.
