FH V6.1.4 added Smart GEDCOM Loading and the Tools > Uncategorised Data > Recover Uncategorised Data command.
This recognises what would otherwise be UDF and converts them into valid FH data tags.
However, there is little documentation, and I have only just discovered how that is governed.
In C:\ProgramData\Calico Pie\Family Historian\General\gedcom_map.fhdata there is a plain text conversion table.
With some care, additional conversions can be easily added, and work better than Plugin conversions.
e.g.
It already has REPO.EMAIL=map:_EMAIL to map GEDCOM 5.5.1 Repository EMAIL tags to FH custom _MAIL tags.
So by adding REPO.WWW=map:_WEB it maps GEDCOM 5.5.1 Repository WWW tags to FH custom _WEB tags.

The possibilities are just dawning on me, and additional conversions for importing from other products are feasible to avoid all the messing about with UDF. Many of the existing conversions work with the Extended Set of facts.
Also the Recover Uncategorised Data command works retrospectively on existing Projects that still have UDF.

It is particularly useful at converting Event/Attribute level 1 tags, and is easier than the Change Any Fact Tag Plugin if you simply need a global replacement.
e.g.
INDI._DNA=att:DNA Markers
INDI._ELEC=att:Elected
INDI.EMAIL=att:Email
INDI._EMPLOY=att:Employment

That last one could alternatively map onto the standard OCCUpation Attribute:
INDI._EMPLOY=map:OCCU
