Gt Grandfather at Covent Garden Market in 1890s

Family anecdote has it that my Gt Grandfather, a John Clarke, was appointed general manager of Covent Garden Market in the 1890s. I've totally lost track of him after his marriage in 1884 in London, although there is some evidence of his family in Cardiff in the early 1890s. Maybe they moved away, then back to London when he got the new job.

It would help if I can confirm the job at the market, but googling Covent Garden history doesn't find anything of enough detail. I've no idea if employee records exist, or were even kept in the first place. The market was under private ownership until about 1914.

If anyone has any thoughts on where I might look, I'd be grateful. I've rather run out of ideas!

Many thanks Jane, that does look interesting, and will keep me busy for a while reading through it.

I've not come across A2A before, and just googled for it. That looks a useful resource and worth investigating further, so thank you for that as well.
