Surname variations

Hi
Can anyone tell me the correct use of surnames when it varies from birth to death and from generation to generation, ie I have a family that parish records give the baptism as Steventon the marriage gives the name Steinton and all the children as Stinton which is the name that all decendants are now known by. Question do you enter the Baptism register name or the name that the family are now known by? what do you do?
