Has anybody done one of these in Ancestral Sources?
I have an ancestor who was aboard HMS Simoom in the South China Seas on the date of the 1861 census. I Have their record from the Enumeration Book but am not sure how to record it.

Personally, I wouldn't over complicate things, and would treat the Address as the ship name with it's location in the Place field. That said, it really depends on how you use your data - just on reports or a website or.... as the Fact sentence obviously needs to "read" right!.

I'm not sure if it is the same, but I have Ship Census templates for 1861-1891, as I had a relative that was on ship in Cardiff Bay in 1891, so I looked up the info on Ship census's and made them for AS. If similar to what you have, you could do a modified template if not the same as English one. I've attached to this post.
