I use method 1 for recording census facts and generally find it convenient, except when I want to check the details of a previously recorded census entry while looking at the record properties of an individual in FH. In this case there is an "Actual Text" field as part of the Source details which is impossible to read or expand.
It would be much more convenient if the text was recorded as the "Text from Source:" field in the citation details.
I can see that this seems illogical for method 1 which uses a single Source with no distinct citations but it would help in practical terms. Or am I missing something?

I think what you are looking at is the expanded Source in the yellow Source Citation pane of the Property Box.
The Actual Text is a 'preview' of the Text From Source field in the Source record.
Click on the large blue arrow Go To Source Record button below and the Source record Property Box opens to reveal the Text From Source field in full.
If that text was saved in the yellow Source Citation pane Text From Source field it would need to be repeated in every Individual householder's copy, which gets awkward if ever needed to be updated.
BTW: This is nothing to do with Ancestral Sources but just the way Family Historian works.
