I have a customized template and want to delete a couple of the field definitions but can't find any place to do that. Once created, are we stuck with them forever?

Teresa, almost all changes to Source Templates should start with Tools > Source Template Definitions...
There you can View/Edit... each template and use the big red X to delete Fields.
Unfortunately, the usual Save and Compare/Sync with Source Template Record process does not handle deletion of Fields and perhaps should be reported to CP.
So in the Records Window, on the Source Template tab, open the template Property Box on its All tab where the Field can be selected and deleted by hitting Delete key or using Edit > Delete.
There you can View/Edit... each template and use the big red X to delete Fields.

Thanks, Mike - I just right-clicked there and assumed there would be a delete option. I did delete the field over in my actual Template Definition, but, as you said, the Compare/Sync feature, doesn't handle that well.
