What is the sentence code for making a person's surname possessive as in the sentence - Mr. Smith's second marriage. Can anyone help? Also where can I find a reference for all of the sentence codes and examples?

Use Help>Search Help, and on the index tab search for Sentence Template Codes. This gives you the full list.
However I'm afraid there is no code for the possesive of a person's surname. The closest is {his/her}.

Alternatively, in the Fact Definition dialogue, where the Sentence Template exists, click << Insert Code and choose How to Use Advanced Features... at the bottom. Then scroll up and down to find all the codes, data refs, etc.

{individual's} will sometimes say John Smith's but more often just His.

If you specifically want it to say Mr. Smith's you will have to concoct that yourself using something like:
{=Sex(%CUR_PRIN%,"Mr. ","Ms. ","")}{%CUR_PRIN.NAME:SURNAME%}'s
but getting the title correct is tricky, especially for women, and even FH would struggle with that.
Should the title be Mr., Dr., Rev., Miss, Ms., Mrs., etc, etc?
If you don't need the title then {%CUR_PRIN.NAME%}'s will always say John Smith's or Jane Doe's
However, even that is problematic for married women as Jane Doe will typically be her maiden name.
