I'm not sure whether this should be posted here or in the plugin forum.
I am sure there was a plug-in to replace "1911" etc with the actual date of the census, as I have a large number of records with the correct date and recall running something to do this. It is possible I did this before I had a massive computer crash last year, but I successfully restored everything - but I do not have such a plug in now. I have searched the plugin store and can't find it - although the new design of the store is nothing like as easy to search - can anyone point me in the right direction please? I am still using v 6.2.7

Have you still got Ancestral Sources version 5 installed?
It had tools for reviewing and correcting Census dates, which is perhaps what you recall using before.
Failing that, use the Search and Replace plugin to correct just the Census Dates.
i.e.
Set Search Scope to Census (INDI.CENS)
Set Basic Filters with only Date fields ticked.
Ensure Lua Pattern Mode is selected.
Search for ^1841$ where the ^ and $ represent the start and end of Date so only those with just a Year will match.
Replace with the full date for that Census year.

I do not have AS installed - I don't think I ever reinstalled it after the crash (I did not use it for regular inputs at the time). I think you're right in that I did use it to put the exact dates in. I will have another look at it, failing that I will use the find and replace method you mention.

Take a look at autohotkey to speed up entry of the census dates, without having to remember them!
I have set mine up so that Ctrl-4 enter date for 1941 census, Ctrl-5 enter date for 1951 census etc. etc.
I’m sure you could think of other shortcuts you could make use of.
It certainly saves time when entering these dates, and acts as a great memory aid for us older users
