Is it possible to produce a list containing only individuals against whom a particular source is given. e.g. list everyone that has for example PROBATE as a source in their record. Thanks.

Yes.
...
If you take a standard "Fact" query and add the Source field as a Parameter, you can get a list of all facts that use a specified source (so you might get some duplication of records if for instance a source supports more than one fact for an individual - A Baptism record may support both a birth and a baptism event so the query will report the individual twice)
Note that if you are a source "splitter" this will not work because for instance every probate event with have its own specific split source - so you would have sources like "Probate for H Smith d 12-09-1879" rather than "England & Wales Probate Calendar" or "Probate". Your query will have to work with "contains" rather than "equals" and you won't be able to use a pull down to fill the parameter - so will be sensitive to variations in spelling etc.

The quickest way is to use the standard query Individuals Linked to Source.
You can also select the Source in the Records window and use View > Record Links. This will show not only Individual records but also any Family records linked to the Source.
If you want to see the exact facts used by a given source, use the plugin called List All Citations for a Source. In the Results set you can double-click on a cell in the Item column to open the Property box with the focus on the fact which cites the source.

You could also use the Contains Text query that searches for any text but it will give you any occurance of probate in your project file against an individual so may be too broad.

My previous reply was based on the fact that you asked for a list of individuals against whom a particular source is given. However I notice that in the topic heading you refer to a particular source type.
If you do want a list of individuals who have a source of a particular type, as opposed to a particular Source, use Tools > Work with Data > Source Types. Select the type and then click Where Used on the right.
