Hello,
When using the tree splitter helper and then exporting a gedcom, I cannot seem to remove causes of death. I request that all notes and note fields are removed, and they are, except for causes of death. Oddly, when generating a website with Family Historian, causes of death are removed. I just can't seem to shift them on export.
Is there anything that I might be doing wrong or have I discovered an anomaly?

This deficiency in the Split Tree Helper has been noted before, although I can't find the original topic where it was reported. The problem is that the Cause of Death field is not a note field, so won't be removed with the notes. You would need to use a query to find and then delete all Cause fields. The data ref would be %FACT.CAUS%

There is a similar technique described in how_to:exporting_gedcom_with_multimedia|> Exporting a Family Tree with/without Media under the Export to Website Without Sensitive Data section to Delete Unwanted Fields.
It is interesting you say that Cause is not included in an FH created website, because all the Reports I tried did include Cause by default. I tried Individual Summary, Family Group Sheet, and Individual Narrative.
