OK, maybe I was a little hasty in my judgement - though I did get the impression from the tutorial that the Templates and Auto-Text were integral to the whole exercise. And if the text then needs post-editing, might it sometimes be quicker just to enter it directly in FH? Maybe you misunderstand 'post-editing'.
The concept in AS is that the Template provides an educated attempt at a transcript, with details entered elsewhere filled in as defined by the Template.
For regularly formatted documents such as UK BMD Certificates that works very well.
For less regularly formatted Baptism documents, even when there is a selection of Templates to choose, that may not work so well. Then you can 'post-edit' the Auto-Text box right there in AS with the document in front of you to formulate an accurate transcript.
Subsequently, if you use Method 1 'splitter' Sources, the transcript exists in only one Text From Source box, and can also be 'post-edited' in FH in one place. But if you use Method 2 'lumper' Sources that transcript may exist in multiple Citation Text From Source boxes, and need to be found and edited multiple times. There are ways of mitigating that by using shared Note Records, etc, but using Method 1 seems so much simpler.

I'm perfectly happy with using mostly Method 2 sources, and have no desire to undertake a large-scale change to Method 1. At the present time, based on what I've looked at, and in part because I am dealing more with existing data than entering new stuff, I also don't believe AS has a great deal to offer me, though as I've said, I am prepared to reconsider that in future. If, subsequently, I need to know more about AS, I'll ask about it then.

Is there any way to suppress that sub-heading, or to edit it to something else, other than tweaking the output in a word processor afterwards? I've had a good look at the report options, and the only one relating to Text From Source that I could find was whether or not to show it.

You are correct, the Text From Source: heading & content is a take it or leave it option.
That is why some users prefer the Note field as it has no heading, plus it is a larger box in the Sources For: citation pane.
