When entering the details of my wife's convict ancestors (3 in total), I came across the same problem.
I created Custom Events for 'arrest', 'conviction', and 'sentence', which looks like this:-

If you need advice about creating custom facts, use the FH Help > Search Help, enter "create a custom fact" including the quotes ("), then click List Topics and review the first Topic or two.

I created a Custom Fact called "Criminal" with the following Sentence Template:
{individual} was convicted of {=GetLabelledText(%FACT.NOTE2%,"Offence:")} {date} at {=GetLabelledText(%FACT.NOTE2%,"Court:")} held at {_place}. {=GetLabelledText(%FACT.NOTE2%,"Note:")}
The "Note:" can cover a multitude of things including details of the sentence. I then used the Standard Fact "Residence" for where the individual served their sentence (as they were often transferred on a different date) and just modified the sentence template for the fact so it made more sense.
There are various ways of documenting this, its down a lot to personal preference.
