How can I attach a residence in one go to husband and wife? I've found an old family book with a lot of addresses, but do I really have to put it in separately for both of them (or their children)?

Remember that a Family Fact only applies to the partners/spouses and NOT their children, e.g. Engagement, Marriage, Divorce.
You could create a custom Family Residence Fact but it would be non-standard Gedcom.
Once you have entered the Residence Fact with any Source Citation for say the husband, then copy the fact and paste into wife and each child.

Another option with V6 is to create a residence fact to the head of household and then attach the others as witnesses, I know Mike does not like that method, but I am finding it quite good for "modern" residences.
