holding names
Is there a way of researching a name via the Individual Records and when you've finished updating that record and the family if one, to go back to the Individual's Record and see the next one in alphabetical order in the list instead of re inputting the surname again?

I guess you are talking about using the search Filter: on the Individuals tab in the Records Window.
As far as I can tell, each tab Filter: retains its values until you change them or close FH.
Having searched using Filter: Last Name SMITH and updated some records, when you return to that tab it will still have the same Filter: applied. So either step down to the next SMITH record, or slowly delete the last few characters of that Last Name to widen the Filter: and reveal more records around SMITH. The same concept applies if you have also entered a First Name.

What I do when working through a set is to add them to a named list and remove them as I complete working on them.

Yes Mike I've been doing exactly that but sometimes when I return to the Individual records window, I find the filter blank and the records start again with A? This doesn't happen all the time, it seems to depend on how long I spend researching/updating the name.

I am assuming that you are working within the property boxes.
Click the drop-down on the gear icon nd select recent. This will give you a list of recent property boxes. Select the individual you started with which will take you to their property box and then click the Go To Record icon and that should produce the record window with that individual selected.
