Add a Fact Defaults
Is there any way to change the default facts in the drop down list when one selects 'Add Fact'?

Within the Fact Definition there is a tick-box called "Fast-Add Menu" - this determines whether the fact is included (or not) in the drop down list.

Yes, use Tools > Fact Types. Select the fact you want to add or remove, then click Edit. Near the bottom right corner of the Fact Definition box is a tick-box for Fast-Add Menu.

I came to the conclusion that FH is highly customisable, but just couldn't see how to do it.

Mike, here is how to find about that sort of thing. It does not always work but it often does. You may need to be a bit of a detective.
You know it is related to the Facts tab, so with that tab selected, click the F1 key on your keyboard.
Even though there is no Help button, this should open a related Help page.
Against the Add Fact button it talks about the Fast-Add menu, but gives few other clues.
So select the Search tab of the Help window and enter "Fast-Add" including the "quotes" and click List Topics.
That lists Fact Definition Dialog so Display it and your quest is done!
BTW: It is often necessary to put "quotes" around search terms to avoid unfruitful hits. e.g. In this case, without "quotes", it would find entries matching fast, add, added, etc.

As I stated, I am aware that most things can be done if you know where to look. The trouble I find is that the menu items don't neccesarily reflect what it does. Who would guess that fast-fact enables one to modify the drop down list? If the term 'default' or 'option' had been used somewhere, perhaps I would have spotted it.
