FH version 6.
I am about to start backing up my projects to an external source ( memory stick ). When doing a full backup, is this literally a full backup each time, or is just the changes to the last full backup made? I'm thinking of disk space used, when it is only the latest changes made that need to be backed up. Alternatively can the previously full backup be deleted, again with a view to saving space?

The FH File > Backup/Restore > Full Backup is a compressed .zip file of literally everything currently in the Project folder, not just changes. So if satisfied all is OK, then old FH backups can be deleted, but I would advise keeping a few 'insurance' copies.
Also check What is not backed up? in the glossary:backup_and_recovery|> Backup and Recovery. You need to consider backups of all your Preferences and Customisations that are NOT stored in the Project folder.
While reviewing backups, what other folders & files on your PC are important to you? Current versions of Windows have Backup tools to solve that problem, and would include your FH Projects.
