(Trans)Gender as different from Sex

Is it possible to record a person's gender (multi-valued and with a date) rather than their simple birth-sex?
The reason I ask is that I have a relative that was born with a female body and characteristics but has long maintained that he is a male. Moreover he has now transitioned to being a male.
Therefore on-screen and in reports I wish to show birth sex and chosen gender - this has implications for his pronoun too. He chooses to be called 'he' but some of his friends choose to be called 'they' - this is because gender is not a binary (yes/no, black/white, m/f) state - it is a continuum with several obvious points along the way: Male, Neither, Both, Fluid, Female etc. I would like to be able to record such facts along with their dates and notes.
It may be that what I am asking for is not possible in FH - I have not seen any change notices saying Transgender is supported in any V5 or V6 literature.
