The occupations problem, amalgamating place and event description data, is a known issue with earlier versions of FTM but it shouldn't occur with FTM2012.

It seems that the settings in the Default pdf printer profiles cannot be permanently changed. Sorting by the File column in the media listing gives you the information about file paths and file names, but probably the visually best method is to use the external file links view.
