I would be tempted to keep it simple. Create a Generic Source called something like "NFHS - Baptism Database Search 2022-02-27". Attach both of the images you have supplied here as media items. Then cite this source for each of the facts that you create from it.

Yes, I get exactly the same error when I run that code.

The loop count at which it fails changes with each run. Sometimes it will reach 30, sometimes it will not reach 15.

I think the most important thing to do is to make sure you do record the source of any information, as so many people forget to do so when they are starting out (myself included). So the fact that you recognise it is so important is great, and I would say to do it in the way that is most comfortable...

Nearly every single 1921 census I have seen so far makes a right mess of these columns and my assumption is that people didn't really understand what they were being asked. 14 out of the 16 returns I have seen have the markings crossed out by the enumerator and re-entered - and not always correctly....

That's the bit that worries me... What I find most worrying is that a lot of the time, in the 1851 - 1901 censuses, Ancestry regularly get some of the information wrong, especially the Folio number. And I don't mean mis-transcriptions. As I'm sure you're aware, this is the stamped number in the top...

One thing that article explains, is why the census date was in June, but the Address page of the Schedule says it will be collected on Monday, April 25th :)

I can see Witness events in the All tab, and they appear to show all the people marked as witnesses and also where one person has more than one role (if this is what you mean by multiplicity). I can't comment on your other points, sorry.
