I would encourage you to follow Jane's suggestion. Create sources for each will and then create events such as residence, occupation, etc. as appropriate with citations linked to the source.

I'm assuming you have selected 'Document' from the Insert menu. In the open dialogue you will see a 'File of type' drop-down list which has Document Files selected. From this list choose 'All Files' and then you should be able to see the .docx files too and link them.

I think on balance it is such a rare occurrence that I'll leave it as it is rather than build in options to not enter the age. Your solution is a reasonable work around or you could manually create the census record yourself in FH.
