Presumably, once a custom tab has been created to display the 'hidden' facts, then that has the mechanism for adding those facts in much the same way the Main tab has for adding Birth, Death, Marriage facts, etc.
A few 'hidden' facts could even be added to the Main tab without needing a custom tab.

Perhaps there needs to be a new Wish List request for Family Member Family Events/Attributes to supplement the current Family Member Events/Attributes that only allow Individual facts. Rosemary, I think I have corrected the Quotes marks. I believe the problem with saving the chart is because you have not created a Project. You are just opening a free-standing GEDCOM file and should have got a warning when you opened that in FH, but perhaps you unticked 'Show this again next time'....

I think you are saying you cannot add a Sort Date to those Occupation summaries because they have no Date. You are mistaken... Jean, please read the Help that explains all about the fact sorting features. Yes, the 'Normal Time Frame' plays an important part and so do the Fact Dates. Use the Diagram > Save Diagram command to save it as what FH calls a Saved Chart. Then retrieve it via the Charts > Save Charts... menu option and select the Chart Name you saved.
